Preheat the oven to 180oC and line an 8 x 8 inch baking tray with grease-proof paper.
Blitz the dates and ginger in a blender until broken into small pieces.
Tip the mixture into a bowl and add the rest of the ingredients using your hands to combine the mixture without crushing the puffed rice.
Tip the mixture into the tray and flatten into the corners with the back of a spoon. Bake for 10-15 minutes until golden.
Remove the mixture from the tray, cut into 8 equal pieces and leave to cool on a wire rack before serving.
