    Preheat the oven to 200oC. Scrub and clean the sweet potatoes and remove any strands. Pierce them a few times with a fork and bake in the oven for 40-50 until tender.

    While the potatoes are cooking, slice the cheese and prep any toppings you want to add. We recommend chicken, chorizo, mushrooms, tomatoes and peppers.

    When the potatoes are cooked, remove them and use a sharp knife to cut them in half lengthways. Scoop out the flesh leaving a thin layer around the outside. Put half the flesh into a large bowl and mix with the harissa, tomato puree, salt and pepper. The remaining flesh can be served as a side or used to make our amazing sweet potato brownies.

    Lightly brush the potato skins with coconut oil and put back in the over for 5 minutes to crisp up.

    Remove the potato skins. Fill with the harissa, potato mixture and top with mozzarella, basil and your favourite toppings.
