Sweet potato fries
Sweet potato wedges are notoriously hard to get right, but we feel we're getting pretty close with this method.

Preheat the oven to 200oC. Peel the sweet potato and cut into square strips about 1cm wide and place in a large mixing bowl.
Warm the coconut oil by placing it in a bowl over hot water until its completely runny. Pour the coconut oil over the sweet potatoes and use you hands to cover the fries with the oil.
Tip the fries into a baking tray. Make sure they have lots of space or they won't crisp up. Sprinkle over the salt and bake for 20-30 minutes, turning occasionally.
