Fresh vegetables and chorizo stuffed into a sweet red pepper. These make an amazing side dish and are superb with steak!

    Preheat an oven to 200oC. Fry the chorizo slices on a medium-high heat for 3 minutes.

    Turn the heat down to medium and add the vegetables. Fry for 5 minutes until the veg begins to soften, stirring often.

    Slice the tops off the peppers and remove the core and seeds. Stuff the peppers with the fried chorizo and vegetables and pop the pepper lids back on top. Roast in the oven for 15-20 minutes until the peppers begin to blacken slightly and sweeten.
