Method

    Put the dates, oats, protein powder and honey into a blender and combine until you have a sticky ball - you may need to add a little water to get the mixture to stick together.

    Dust a chopping board with coco powder and transfer your 'cookie dough', flatten the mixture using your hands until it is approximately the same thickness as a pound coin.

    Using a small circular cookie cutter cut an even number of circles - you can use other shapes if you want to. Re-work the mixture to get the maximum number of 'cookies' - once you have gleaned all you can from the mixture, put the 'cookies' on the plate and put in the freezer for 10 minutes while you make the filling.

    For the filling, add the creamed coconut and peppermint extract into the blender and combine until smooth and buttery in texture.

    Take the 'cookies' out of the freezer, spread the filling on a cookie and top with another 'cookie to form a rawreo. Repeat this process until all your 'cookies' have a bottom, filling and a top.

    Store the completed rawreos in an airtight container, separating them with baking paper, and leave them to set them in the fridge. Store in the fridge until serving.
