Paleo pasta with grilled sausage

Turn the grill to a medium heat. Using a fork, prick the sausages on either side several times to make sure the fat has a place to run out. Put the sausages under the grill, cook until the sausages are fully cooked through and have a nice brown colour to the skin. Remove from the grill, slice and put to one side for later.
Heat coconut oil in a non-stick pan on med - low heat until the oil has fully melted.
Add the garlic, mushrooms, red pepper and basil to the pan. Saute for five minutes.
Add the tomatoes and cook for a further 5 - 10 mintues. While the pan is cooking, use a vegetable peeler to cut the carrots into ribbons.
Add the carrots and your sliced sausage from earlier to the pan. Stir in the tomato puree and water until they thinly coat all of the carrot. Cook everything together for a futher 10 minutes or until the carrot is cooked to the firmness you prefer. Serve with a garnish of fresh basil.
