The key to exceptional roast potatoes is not to crowd the tray.
Preheat the oven to 200oC. Wash all the potatoes and remove any tough strands or eyes but do not peel. Chop the potatoes into 2 inch chunks. Put the white potatoes in a pan, cover with water and bring to the boil for 5 minutes.
Add the sweet potatoes to the water and continue to boil for 5 more minutes. Sweet potatoes don't need as much time to boil as normal ones.
While the potatoes are boiling, put the coconut oil into a large mixing bowl and place over the boiling potatoes to melt the oil. Drain the potatoes thoroughly in a colander and shake them to roughen up the edges then tip into the mixing bowl with the oil.
Mix the potatoes in the oil and then transfer into a roasting tin (or two). Roast for 30 minutes, turning occasionally until golden and crispy.
