Easy chicken & noodles with peanut sauce

    To make the peanut sauce, combine the peanut butter, honey, rice vinegar, soy sauce and water in a bowl and microwave for 1 minute. Stir thoroughly.

    Heat a non-stick wok or pan on a high heat and toast the sesame seeds for a minute or two until they start turning brown, remove them from the pan and put to  one side for later on.

    Add 1/2 tsp of coconut oil to the hot pan and fry the chicken for 5 minutes until cooked through. Remove the cooked chicken from the pan and drain any liquid. Add the remaining coconut oil to the pan and fry the garlic, ginger, spring onion and red pepper for 2 minutes making sure to keep everything moving.

    Add the chicken back to the pan with the vegetables and pour in the peanut sauce. Simmer for two minutes stirring often. Add the noodles and toasted sesame seeds and use two wooden spoons to combine everything together until the noodles are hot.
