Easy chicken kottu
Kottu is fantastic Sri Lankan street food traditionally made with diced roti, vegetables and egg with mixed spices.

Heat a non-stick frying pan on a high heat and add the coconut oil. When the oil is very hot, tip in all the vegetables with the garlic and ginger and fry for 2 minutes, keeping the vegetables moving.
Add the chicken, curry powder and chili powder and fry for a minute. Add the shredded tortilla and continue to fry for a further few minutes.
Crack the egg into the vegetables and slowly mix through, covering the chicken and veg with chunks of egg. Tip the kottu onto a plate and season with salt and pepper to taste.
