    Line a baking sheet with greaseproof paper and set aside.

    Combine almond flour, salt and baking soda in a food processor.

    Pulse in coconut oil, honey and vanilla extract until a 'dough' forms.

    Stir in the chocolate chuncks by hand to prevent them breaking up too much.

    Let the dough rest in the fridge for 30 minutes to re-harden the oils. When you have approx. 10 mins left for the dough to rest, pre-heat the oven to 150oC.

    Remove the dough from the fridge and scoop out one tablespoon at a time onto the tray you prepared earlier. You will need to use your hands to mould the balls into flat cookie shapes. Place onto the lines baking tray.

    Bake in the oven for 5 - 10 minutes or until golden brown. Leave the cookies on the tray for 10 minutes then transfer to a wire rack with a spatula. The cookies will still be a little soft when you initially take them out of the oven but will harden when you leave them to cool.
