Place a large, cast iron pot on medium-high heat and add the coconut oil.
Coat the diced beef with flour and fry in batched until browned. Leave to one side.
Lower the heat to medium and add in the onion and celery. Cook for 10 minutes until softened. Add the Worcestershire sauce and cook for a further minute then stir in the tomato puree, stock cubes and bay leaves.
Add the beef back to the pan along with the juices. Slowly add 600ml of hot water and stir. Cover and cook for 2 hours then remove the lid and cook for another 30 minutes until the sauce has thickened.
