BBQ pulled chicken
Chicken is high in protein which is great to help build and repair your body after intense workouts.

Preheat the oven to 140oC. Prepare the BBQ sauce and BBQ rub.
Remove any fat from the chicken thighs. Coat the chicken in the BBQ rub and massage the rub into the meat.
Heat the coconut oil in a large, cast iron casserole dish on a medium-high heat and brown the chicken on all sides but not cooking the meat through.
Add the onion to the dish with the chicken and cover with the BBQ sauce. Bring to a simmer, cover with a lid and place in the over form an hour and a half. After 45 minutes, turn the chicken in the sauce.
Remove the dish from the oven and place on a low heat on the hob. using two forks, shred the chicken into chunks and stir into the sauce. Add a dash of warm water if its looking a little dry.
